Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At front counter, cut lettuce (45F - Cold Holding). Lid had been open while making orders. Operator shut lid to bring temperature down.

Meatballs at top of pan over fill line at 112F. Meatballs in bottom of pan at 147F. Operator states they stir meatballs every 20 minutes and stirred meatballs to distribute heat.
