Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Three compartment sink Quaternary 100ppm. Manager stated they have been having problems with their sanitizer dispenser. Inspector had manager manually add sanitizer to sink, then 200ppm. Inspector instructed manager to call maintenance to service the sanitizer dispenser and resanitize all dishes washed today.
