Observed Tuna salad (48F - Cold Holding); Sliced ham (47F - Cold Holding); Sliced cheese (48F - Cold Holding); Cooked chicken (48F - Cold Holding); Cooked steak (49F - Cold Holding) inside walk in cooler. Operator is moving all TCS items to functioning reach in coolers and walk in freezer while waiting for maintenance to arrive and service unit.

Wiping cloth sanitizing solution stored on the floor. Observed sanitizer bucket stored on floor by cash register. Operator moved to counter.

Observed Richard Gray could not locate proof of training. Per employee, he has been at this location for four months.
