Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employee accept cash,process payment for customer, and put on new gloves and finish sandwich without washing hands. Discussed proper glove changing with handwashing procedure.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Eggs (53F - Cold Holding) in assembly line reach-in cooler. Employee stated the eggs had been in the cooler for less than 4 hours. Employee moved to another cooler.
