Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In left cold unit, sliced pepper jack cheese (42-52F - Cold Holding); sliced white american cheese (43-52F - Cold Holding). Observed both cheeses to be over-stacked above container chill line. Per employee in unit since 8:00am and not prepared or portioned today. Employee removed over-stacked portions to walk in cooler to rechill.
Probe thermometer not accurate within plus or minus 2 degrees Fahrenheit. Batteries dead in probe thermometer.
