Observed : in the cold hold unit closest to the register: Preformed egg 63, cut tomato 59, shredded lettuce 57. The unit was not fully stocked yet, the units digital thermometer reads 61. All the spaces were then filled with pans of food. Egg and cut tomato's were cooling rapidly. The unit was being stocked just prior to temperatures being taken.

Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed : the 3 compartment sink using quaternary ammonia tested at 0 ppm for quaternary ammonia 2 times.

Observed : on the front line back counter by the hand wash sink, the sweet n low packets were stored directly und the downward dispensing hand soap. The box was moved to the side.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed : the ice maker shroud in the kitchen is soiled. ALSO, multiple soda nozzles and diffusers in the dining area are soiled.

Observed : only 1 certificate, 1 other over 60 days.
Floor tiles missing and/or in disrepair. Observed : by the mop sink, multiple cove base tiles are broken off or cracked.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed: chili in the hot well at 84°. The hot well was on a low setting, this was increased. The chili is reheating to 165° in the microwave.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed the electric slice has dried food debris on the blade. ALSO, the ice machine shroud is soiled. AND the soda nozzles have buildup.
Food stored on floor. Observed: a case of ham on the floor in the walk-in cooler. This was placed on a shelf..
Single-service articles not stored inverted or protected from contamination. Observed: coffee cups and to go items on the front line, contact side up. Gloves were put on and items flipped onto a clean surface.

Food-contact surface soiled with food debris, mold-like substance or slime. Observed: the pusher head for the tomato slicer has dried debris between the plates. ALSO, the Mt Dew and Pepsi diffusers are soiled. ALSO, the cutting board on the Smart wall has stains.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed: the electric slicer swing away guard and backside guard have food debris on them. ALSO, the discharge tubes for the soda machine have dark foreign substance on them.
Stored food not covered. Observed: frozen dough sticks in the walk-in freezer are not covered.
