Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Shredded Cheese (46F - Cold Holding); Fresh Mozzarella Cheese (46F - Cold Holding); Pepper Jack Cheese (46F - Cold Holding); Steak (52F - Cold Holding); Chicken (47F - Cold Holding); Turkey (45F - Cold Holding); Ham (45F - Cold Holding) in the sandwich make line reach-in cooler across from the bread holder cabinet. Operator stated that the items in the cooler were in the walk-in cooler prior to being out in the reach-in cooler this morning and had been in the cooler for less than 4 hours. Operator started to ice food products down.
