Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. meatballs (123F - Hot Holding) Observed in steam table. Per operator, out of temperature for approximately 1 hour. Operator returned meatballs to microwave to reheat to 165+F.
