Employee washed and rinsed food containers and meat slicer blade cover, then placed items to air dry on storage shelves without sanitized items. Discussed with employee, employee set up sanitizer and re sanitized items at time of inspection.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Display cooler at front line cold Holding: cooked chicken 46 F, sliced tomato 47 F. A container of sliced roast beef 44 F stored in reach-in cooler at front service line. Employee moved items to walk-in cooler.
