Also, cooked chicken wings, half and half, sliced cheddar cheese, raw beef (47F-53F - Cold Holding) in bottom reach-in cooler at closed end of cook line. Operator stated cooler working fine earlier. Operator asked to place items in cooler that is able to maintain temperature of 41F and below to chill foods. Also, sliced provolone cheese, raw beef (60F-63F - Cold Holding) in in drawers below grill. Employee stated the drawer was opened during lunch. Operator stated she will ensure drawers stay closed.

Operator stated the cook that stocked items in drawer wasn't aware that the reach-in cooler drawers are not able to maintain temperature of 41F and below. Items were placed in cooler about an hour prior. Operator removed foods and placed in nearby reach-in cooler to chill. Also, cut lettuce, cut cabbage, (46F - Cold Holding); house made pico, butter, shredded cheese in top of reach-in cooler on cook line next to dessert area. Operator stated there should have been ice put in bottom to chill foods. Operator replenished ice to chill foods.
