Food-contact surface soiled with food debris, mold-like substance or slime. Build up of food debris on the pizza oven conveyor tracks. Operator has maintenance cleaning and fixing the pizza oven. Can opener on the prep table has old food debris on the blade. Operator cleaned and sanitized the can opener.
Building components, attachments or fixtures in poor repair. Air conditioning unit in kitchen area has mold like substance on the air vent. Maintenance went to get part to replace the unit.
Carbon dioxide/helium tanks not adequately secured. Carbon dioxide tank stored by the walk in beer cooler stored unsecured. Maintenance will install chain per operator.
Equipment in poor repair. Prep table with steam table on it has rust build up. Operator cleaned and sanitized the prep table. Build up of ice on the compressor of the flip top reach in cooler. Operator is going to thaw out the unit.
Food stored on floor. At the service counter, jug of fryer oil and container of salt stored on the floor. Operator relocated to the correct storage location.
Ice bucket/shovel stored on floor between uses. Ice bucket on the floor in front of the bulk ice bin. Operator relocated the ice bucket.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Flip top reach in cooler door gasket has mold like substance build up. Operator cleaned the door gaskets.
Working containers of food removed from original container not identified by common name. Bulk container of salt with no label. Operator labeled the bulk container.
