Only use single-service items to serve food to customers until approved sanitizer is available for warewashing. Observed establishment using Ecolab brand rapid surface disinfectant cleaner. Manager provided bleach to use as sanitizer.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no chemical test kit for three-compartment sink.
