Per operator, foods held out not prepped or portioned today; food stored out of temperature for approximately 10 minutes. Operator put milk inside freezer to quick chill.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed chopped steak (122F - Hot Holding) at steam table. Per operator, foods held out stored at steam table for approximately 10 minutes. Operator put food inside microwave to reheat to 165F for hot holding.

Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Employee washed hands wearing gloves, then proceed to grab RTE corn and cheese arepa. After instructed, employee discarded gloves, washed hands and put in new pair of gloves.
