Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Observed establishment cooking various soups with vegetables then placing soups in plastic containers and sealing containers after soups reach below 135F and before soup reaches 41F. Person in charge stated soups are cooled to at least 65F before sealing and placing in walk-in cooler or walk-in freezer.
