Menu does not identify which items contain raw or undercooked animal foods covered by the consumer advisory. Smoked salmon on menu but not identified as raw. Operator placed asterisk on menus during inspection.

Raw chicken was stored above raw beef and washed zucchini in the rear reach-in cooler. In the walk-in cooler, a slab of raw bacon was stored above quiche. Operator moved items to proper storage.

Non-food grade paper/paper towel used as liner for food container. Cloth towel was stored on top of and in contact with crepes in a container in the walk-in cooler. Operator removed towel.
Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Observed a package of raw chicken stored directly above ready to eat ham in the walk-in cooler. A flat of raw shell eggs was stored on top of a container of crepes. Operator moved chicken and eggs to proper storage for food safety.
No chemical test kit provided when using sanitizer at warewashing machine. Technician was present and provided Operator with strips.
No paper towels or mechanical hand drying device provided at handwash sink in the dish area. Employee replaced paper towel supply.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Operator primed the sanitizer and re-ran machine which achieved proper ppm.. Dishwasher (Chlorine 0ppm); Dishwasher (Chlorine 100ppm)
