Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Inside walk in cooler- cooked chicken (51F) cooked beef (47F) raw tuna (48F) cooked shrimp (48F) items placed inside walk in freezer for rapid chill. Re-temperature all items under 41F.
Chemical test kit not used to ensure proper sanitization of equipment and utensils when using a chemical sanitizer.
In-use utensil stored in standing water less than 135 degrees Fahrenheit. Utensils stored in water at 112F. Manager removed utensils and placed at dishwasher.
