Observed employee touched his face and continue working with clean utensils without washing his hands. Employee was coached about the issue.
Stop Sale issued due to food not being in a wholesome, sound condition. Observed commercially packaged ROP tuna already thawed inside sealed bag. Owner discarded the package immediately.
Expired chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed quart test kit expired since August 2024.
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw salmon above mayo and raw scallops above edamame inside reach in cooler. Employee changed the storage order.
Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Observed Sushi rice at 127 F with no time marking. Employee marked the rice immediately.
