Observed yellowfin tuna (45 F - Cold Holding); salmon (45 F - Cold Holding) inside reach in cooler in Sushi Prep Area. As per Operator both items have been around an hour inside reach in cooler. Operator placed them inside reach in freezer for rapid cooling.
