Observed cut tomatoes, cut cabbage, cooked potatoes, cooked fruit, and cooked vegetables are held on time control with no plan. Foods located on cook line and server prep area. Operator is tracking time on a dry erase sheet on cook line. Food is held on time control from 10:30am-2:30pm.
