Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Milk 45F sitting on self service counter. Milk was moved from cold holding unit 2 hours prior. Operator moved milk back to refrigerator. Emailed and discussed time as a public health control procedure. In dessert cooler on self service counter: tiramasu (47F - Cold Holding); cheesecake (45F - Cold Holding). Operator states desserts were transported from main location 1.5 hours prior and were not transported in a cold holding unit. Discussed the need to keep food at 41F or below during transportation. Food was relocated to the reach in cooler.
