Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer Bucket (Sink and Surface cleaner sanitizer - 1130 ppm DDBSA and 3010 ppm lactic acid) on front counter next to pizza press. Operator diluted to proper strength.
Handwash sink used for purposes other than handwashing. Observed employee dumping during in handwash sink front line. Spoke with operator about clearing sinks for proper use only.
No paper towels or mechanical hand drying device provided at shared handwash sink in back kitchen.
Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Dust on ceiling of front part of kitchen, attached lights.
In-use utensil not stored on a clean portion of food preparation or cooking equipment. Pizza paddles on soiled top of pizza oven.
