Thawed portions of ready-to-eat, time/temperature control for safety food rose above 41 degrees Fahrenheit while being thawed under running water. Chicken, per operator was thawed under running water for less than two hours and reached 71 F. Operator iced down chicken to rapidly cool.

Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Employee handled raw ground beef and changed gloves to then work with ready to eat lettuce without hand washing. Discussed with operator and observed proper hand washing with glove change.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. chili (49 F - Cold Holding); cooked chicken (48 F - Cold Holding); ground beef (45 F - Cold Holding). During 8:00 AM line check food was observed by the operator to be at 38 F (ColdHolding). It can be determined that food was not above 41 F more than 4 hours. Operator moved food to walk in freezer and other functioning cold holding units to rapidly cool.
