Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. chicken salad (47F - Cold Holding) item on rolling cart in walk in cooler, operator stated cart is used for catering orders when employees prep catering orders the cart is rolled into kitchen and sits there while food is being prepared, any leftover items are then rolled back into walk in cooler. Item in walk in cooler, inspector propped lid off of container to allow the cold air to get to food item.
