Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. At walk in freezer raw beef not commercially packaged over tortillas- operator moved raw beef to lower shelf.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. At steam table-Chicken soup 110-120F- hot holding, beef soup 120-125F- hot holding- food out of temperature for 30 minutes- operator placed on stove to be reheated to 165F.
Exterior door has a gap at the threshold that opens to the outside.
