An employee sneezed and continued to work with clean utensils without removing their gloves and washing their hands. Employee was educated on proper hand washing after sneezing. Employee removed their gloves and washed their hands.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In the steam table french fries (133F - Hot Holding). Per operator the french fries have been holding less than one hour. Operator voluntarily discarded the french fries.
Equipment and utensils not properly air-dried - wet nesting. There are multiple pans wet nested by the triple sink.

In the drop in make table cooler in the middle of the kitchen, shredded cheddar cheese (49F - Cold Holding); shredded jack cheese (50F - Cold Holding). Per operator items have been in the cooler less than two hours. Shredded cheeses moved to reach in freezer for rapid cooling.
