Reach-in cooler interior/shelves have accumulation of soil residues. Observed interior of reach-in cooler at make stations soiled. Also, interior and shelving in food warmer across from make station soiled.
Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed sanitizer Bucket (Quaternary 0ppm) at end of cook line and at front counter. Employee stated he just changed the solution out at triple sink. Employee let solution run for a minute and remade solution and retested at 200ppm.
A return visit. The problems from the previous inspection had been dealt with.
