Observed employee arrive to work and handle wrapped tortillas and warming unit handles without washing hands first. Employee coached on proper handwashing and employee washed hands.
Ice buildup in reach-in freezer and/or walk-in freezer. Heavy ice build up in reach-in freezer by the fryer.
Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Wiping cloth solution on make line tested at 0ppm quaternary ammonium. Operator remade solution to 250ppm.
