Observed in back kitchen area 3 compartment sink Triple Sink (Quaternary 000ppm). Person in charge stated the sanitizer concentrate was empty and Person in charge hooked up new container.
No color/concentration comparison chart available for chemical test kit used to check sanitizer.

Employee returned to kitchen and put on glove and started food preparation and failed to wash hands. Educated employee on Handwashing and glove use. Employee removed soiled gloves,washed hands and put on clean gloves.
