Observed employee with gloves on went outside the food truck and inverted a mop,went back inside the food truck,changed gloves and failed to wash hands. Employee touched clean food pan. Stopped employee and educated him on glove use and handwashing. Employee placed pan in 3 compartment sink,removed soiled gloves,washed hands and put on clean gloves.
