Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.observed in reach in cooler raw beef (55F - Cold Holding); Person in charge stated it had been outside the reach in cooler for approximately 1 hour before he placed it in the reach in cooler.

Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employee with gloves on went outside the food truck and inverted a mop,went back inside the food truck,changed gloves and failed to wash hands. Employee touched clean food pan. Stopped employee and educated him on glove use and handwashing. Employee placed pan in 3 compartment sink,removed soiled gloves,washed hands and put on clean gloves.
