Observed sliced Swiss cheese, cut tomatoes, cut lettuce (62F-64F - Cold Holding) on counter next to microwave. Operator stated items were left out from when they recently made a sandwich. Operator placed items in reach in freezer to chill. Retemped at end of inspection and Swiss cheese and cut tomatoes at 40F-41F and cut lettuce at 43F

Establishment has no approved Alternative Operating Procedure. Operator handling ready to eat sauce with bare hands and sauce is not getting heated to 145F. Operator washed hands and placed gloves on to continue working with ready to eat sauce. Also, observed employee cutting melon without wearing gloves and melon not being heated to 145F. Discussed with operator.
