Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed beef and onions thawing on counter (52F - Cold Holding) for less than two hours per person in charge. Person in charge placed inside reach in cooler.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Provided written procedures and discussed with person in charge.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed flip-top cooler cutting board stained with food debris.
No sanitizer of any kind available for warewashing. Only use single-service items to serve food to customers until sanitizer is available for warewashing. Observed no sanitizer for use at triple sink. Person in charge had employee purchase bleach from store.
Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Observed previously prepared and frozen beef and onions, chicken not date marked when made. Discussed with operator about freezing and date marking.
Outer openings not protected during operation and vermin and/or environmental cross contamination present. Observed service window and back door left open while flying insects present inside food truck. Person in charge closed screen to service window and closed back door during inspection.
Time/temperature control for safety food thawed in an improper manner. Observed chicken thawing on counter and beef n onions thawing on counter. Discussed options with person in charge.
