Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Cooked Jalepenos at 114F, person in charge added to griddle to reheat.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer bucket at 200+ ppm, remade to 100ppm.
Nonself-sufficient mobile food dispensing vehicle operating from an unapproved commissary. Observed oil and glass drinks in building near food truck. Person in charge removed during inspection.

Raw animal food stored over/not properly separated from ready-to-eat food. Raw chorizo stored over ready to eat sauce, person in charge moved to appropriate location.

Self sufficient unit no longer self sufficient as operator is storing food products in empty building at address where set up. Not an approved commissary. Person in charge began removing food products during inspection.
Outer openings not protected during operation and vermin and/or environmental cross contamination present. Screen door on unit is not fully closed, observed flying insects in unit during inspection.
