Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature: observed a pan of repackaged chicken in walk-in cooler over raw manufacturer sealed beef. General Manager moved the chicken to the bottom shelf.

Handwash sink not accessible for employee use at all times: observed hand-wash sink in ware washing area had sieves and other equipment hanging in front of it making it difficult to wash your hands without touching the equipment with your hat/head. General Manager removed the equipment, had an employee wash, rinse, and sanitize it. He also moved the hooks to another location.

General Manager believes the Owner/Operator has it. Inspector explained that it needs to stay at the establishment.

Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink: observed no water at all to the hand-wash sink in the cook area. Water turned off because the sink was recently knocked off the wall. It has been remounted but the water lines are now too short. General Manager states they have a work order in to get new lines run.

Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly: Dish machine tested to 0ppm. Acting manager had employee change the empty container, primed the dish machine and wash a load of dishes. Retested to 100ppm.
