Raw animal food stored over/not properly separated from ready-to-eat food. In the reach in cooler next to cook top, raw shelled eggs were stored above ready to eat sauces. Operator rearranged for proper storage.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. shredded cheese (56F - Cold Holding). Operator stated foods were taken out of the fridge less than an hour prior to inspection. Explained the importance of time as a public health control. Provided operator with time as a public health control form. Operator filled form at time of inspection.
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Provided operator with food employee reporting agreement form. Employees began to sign form.
Wet wiping cloths stored in detergent and sanitizer mixed together. Observed two wet wiping cloths stored in detergent and water. Operator began dumping water and adding correct strength of sanitizer.
