Cook cracked raw shell eggs and proceeded to open freezer door and handled frozen onion rings for different order. Employee was advised to wash hands and employee washed hands.

Per employee out of cooler approximately 2.5-3 hours. Employee placed butters in ice to rechill. 2) On prep table beside fryer, under no time of temperature control, tater tots (63F - Cold Holding). Per employee out of freezer approximately 1 hour. Employee returned to reach in cooler to rechill.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In kitchen on FLATTOP - clarified butter (124F - Hot Holding). Per employee prepared at 9:15-9:30am. Employee moved butter back to main flattop to reheat above 165F for proper hot holding.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer bucket in front service area reading 200ppm chlorine. Employee diluted to proper 100ppm chlorine.
