Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. - sliced cheese (52f - Cold Holding). Observed on counter at cookline. Operator states less than 1 hour. Operator states held out during busy rush. Operator moved back to cooler

Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Sanitizer 0 ppm in the sink. Ran the sanitizer to test, unit takes a long time to prime and still was not at the proper level. Recommend that the dispenser be serviced. Until then add the sanitizer manually
