Per employee, all products placed in unit at approximately 8:00. Temperatures taken at 1:15. Employee turned up the temperature of the warning cabinet.

No proof of reporting responsibilities for cook, Jesse, hired a few weeks ago, per owner. Provided DBPR Form HR 5030-103. Owner had Jesse sign agreement during inspection.
Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Operator is vacuum sealing and reducing the oxygen in packaging of raw chicken through a vacuum sealing machine. Provided DBPR Form HR 5030-050.
