In flip top # 2 cooler, Corn Salsa (61F - Cold Holding); Salsa (58F - Cold Holding), per operator, foods not prepped or portioned today. Food held in walk in cooler and moved to flip top cooler and held for approximately 1.5 hours. Food was moved back to walk in cooler to quick chill.

Per operator, food not prepped or portioned today; food stored out of temperature for approximately 1 hour. Operator moved food to walk in cooler to quick chill.
