As per employee eggs stored over reach in cooler for 2 hours before the inspection. During the inspection employee placed eggs in reach in cooler.

Observed at counter : pan de bono (80F - Hot Holding); yucca fries (80F - Hot Holding); croquette (80F - Hot Holding); empanada (80F - Hot Holding). As per operator, foods have been there less than an hour. Operator placed all in pastry warmer for rapid heating.
