Raw animal food stored over/not properly separated from ready-to-eat food. Raw shell eggs stored on bucket of sour cream in 2 door cooler in kitchen. Educated employee on proper storage. Employee rearranged food for proper storage.
Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Employee washed hands without removing gloves. Educated employee on proper handwashing procedures, and employee removed gloves and washed hands.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In low boy cooler, Shredded Cheese (52F - Cold Holding), per operator, foods not prepared or portioned today. Food held in low boy cooler on cook line for approximately 3 hours. Advised employee to move food back to reach in cooler to quick chill. Food was moved back to reach in cooler.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Provided poster to operator.
