Observed prep top cooler items on top (); cut tomatoes (54F - Cold Holding); cut lettuce (50F - Cold Holding); queso (54F - Cold Holding); bottom compartment (54F); rice (42F - Cold Holding) operator states items were loaded at 1200pm must be used or discarded by 400pm. Operator was advised of time as a public health control and given form via email.
Time/temperature control for safety food reheated for hot holding not reaching 165 degrees Fahrenheit for 15 seconds within 2 hours. chicken (118F - Reheating); cooked tomatillos on counter (57F - Cold Holding) operator added to grill and turned up heat to quickly reheat to 165F.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed chopped cooked steak (123F - Hot Holding); cooked onions and pepper (101F - Hot Holding)stored on counter. Operator states she took them off the grill at 1200pm. Items must be sold or discarded by 4 pm
