Establishment has no approved Alternative Operating Procedure. Observed employee handle cooked tortillas coming off of-flat top with bare hands. Discussed using gloves or tongs when handling the tortillas when they are done cooking.
Employee washed hands with no soap in three compartment sink then wiped her hands on her apron. Discussed proper hand washing with operator.
