Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. The chef replaced chlorine sanitizer bucket.
Raw animal food stored over or with unwashed produce. Observed raw tuna and raw tuna over unwashed produce in stand up reach-in cooler near cook line. The Chef moved raw products to bottom shelf in stand up reach-in cooler.
