As per employee for approximately for 1 hr. Employee placed the cheese container directly in the reach in cooler.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed cooked potatoes left at ambient temperature to cool down, cooked potatoes were at 110 F. Employee placed the cooked potatoes inside the reach in cooler immediately.
