Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1. Left flip top, Cooked potatoes (47F - Cold Holding); raw fish (45F - Cold Holding). 2. Observed in walk in cooler - Raw chicken (47F - Cold Holding); raw shrimp (48F - Cold Holding); sea food blend (45F - Cold Holding). Per operator items were left out for less than one hour. Advised operator to place items in cooler for quick chill.

Observed employee using his phone in kitchen then proceeds to serve customer their order without conducting a proper hand wash. Educated manager on proper handwashing procedures. Manager spoke to employee. Employee properly washed hands.
