In Walk in cooler, observed lobster soup in Reduced Oxygen Packaging. Per operator soup has been in packaging for one hour. Operator removed product from packaging.

Observed sliced cheese (51F - Cold Holding); butter (47F - Cold Holding); sweet potatoes (48F - Cold Holding); blanched asparagus (47F - Cold Holding); cooked orzo (53F - Cold Holding) in the reach in cooler at the center of the cook line. The operator provided a PM temperature check log indicating internal food temperatures were less than 41F. The operator to monitor temperatures throughout the evening. Observed fresh garlic and oil (55F - Cold Holding) in the reach in cooler at the end of the cook line. The operator voluntarily discarded the oil mixture.

Observed dish machine in bar area testing at 0ppm, after priming and running three times. Operator replaced with new sanitizer and called technician. Operator using main dish washer till bar is fixed.
