Observed Raw Ground beef over raw fish at pullout drawers at grill station, raw ground beef over raw whole beef strip loin and raw shell eggs at outside walk in cooler. Educated operator on proper storage procedures. Emailed safe storage chart to operator.

Per operator, out of temperature for approximately 30 minutes. Operator placed back on stove and oven to reheat to 165+F

At current rate of cooling product will not reach 41F within 4 hours. Per operator, out of temperature for approximately 1 hour. Advised operator to use time control.
