Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Falafel not made today per person in charge on speed rack with no active preparation occurring at 60F. Person in charge states brought out entire speed rack to utilize to cool pita for short period of time. Person in charge moved back into walk in cooler.
