Raw animal food stored over/not properly separated from ready-to-eat food. Raw chicken wings over cooked beef broth and canned soda. Operator rearranged foods for proper food storage.

In steam table cooked beef (125F - Hot Holding) for less than thirty minutes per operator. Operator removed buffer and set timer for four hour discard, emailed operator time as a public health control form and explained use.
