Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed plantains on the front line at 109-125°. These were refried to 168°.
Toxic substance/chemical improperly stored. Observed the cutting blue window cleaner stored over the rice maker by the back hand wash sink. The spray was moved to cleaning.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed the cutting board on the front line, stained. ALSO, the can opener blade with dried food debris on it.
Carbon dioxide/helium tanks not adequately secured. Observed the co2 tank by the bulk sodas was not secured. The chain was added.
Food stored in a location that is exposed to splash/dust. Observed : lard stored under the paper towel dispenser for the front line hand wash sink. This was moved forward and covered.
